#EATCLEAN: HERE'S A MOUTH-WATERING NEW WAY TO EAT LENTILS

Serve up a bowl of lentil goodness.

2016 is the International Year of Pulses, which includes lentils. These little protein and fiber-packed powerhouses are low in calories, extremely versatile, and generally cook quickly, meaning dinner can be on the table in under an hour. So many different colors and recipes exist for lentils that it’s hard to get bored. We’d like to share one of our favorite ways to eat them with you. We hope you’ll find it just as satisfying and scrumptious as us.

CURRIED LENTIL-TOMATO STEW (FOR 4-6 PEOPLE)

Splash of olive oil

½ of a large onion, diced

1 clove of garlic

1-2 medium-to-large carrots, diced

1 14.5 oz. can of diced tomatoes

1 cup green lentils

2 cups of chicken or vegetable broth, preferably homemade

2 teaspoons curry powder

Sprinkle of dried thyme

2 teaspoons salt

¼ teaspoon black pepper

½ tablespoon red wine vinegar

Wash and pick through the lentils to make sure there are no stones. Set aside. Heat the oil in a large saucepan and add the onion and carrots. Sauté them for 8-10 minutes over medium-low heat, stirring occasionally. Add the garlic and sauté for one to two more minutes, lowering the heat if the garlic browns too quickly. Add the diced tomatoes to the pan and then the lentils, broth, and spices. Bring everything to a boil, cover the pan, and then bring the mixture to a simmer for 30-40 minutes, or until the lentils and carrots are tender. Stir occasionally and add more broth or water if the liquid level drops too much. Once everything is cooked, remove from heat and let sit 5 minutes. Add the red wine vinegar, stir, and then taste. Add more seasoning if needed, and serve warm with crusty bread, or over rice.

Lentils are a superfood and have a low Glycemic Index, meaning they’re anti-inflammatory and help prevent premature wrinkles from forming. They’re also a ‘’belly-flattening food’’ – if you start making them a staple in your diet now, your beach body will be ready in no time.
